I am also an instant coffee hater. However, i have some tips to give to you about turkish coffee.
Turkish coffee is made of roasted and ground arabica type coffee. Mostly the coffee grains come from Brasil. Any other coffee will give you a different taste. It is easy to go to a coffee shop throughout Europe and ask arabica to be ground well. It should be smoother than filter coffee.
Actually, what's an 'ibrik' in turkish? it is actually a container used to pour water, not to brew coffee. what you should buy is called "cezve". The very authentic way of making turkish coffee is with a cezve that has a narrow neck, and u should brew it on incandescent burning wood coals for a long time. Drinking coffee like soup is a sacrilege!! :O) even an italian espresso cup should work better than a huge mug. If you pour the coffee into such a large recipient you will lose the froth, perfume and your coffee will soon become cold. Your coffee cup should be small, if possible made of thin porcelain. MUST have a side handle!! I'm sure that you can find something that can meet your needs i any porcelain shop in your country :OD
Here's a free recipe of turkish coffee for you then...
1. Buy a cezve. It comes in several sizes but buy one for 1-2 persons max. U can find some in e-bay, etc. Best are made of copper, but be sure that inside the cezve is covered with tin and renew the tin time to time. There are also steel or teflon cezves, u can buy one for the sake of practicality.
2. Buy an appropriate coffee cup.
3. Have your coffee thoroughly roasted and ground. It should have a sweet brown color, strong aroma and a powder-like texture. Always use freshly ground coffee. Keep your coffee in the fridge or in a cool, odor free place, in a sealed fashion. a small glass jar works best!!
4. Find a tea spoon and have a heater- gas head that you can use very dimly. Turkish coffee needs time to be brewed, u should use less heat and more time for that.
5. If you use sugar, dont put much and always pour it before the coffee brews. Never put additives like cardimon or other herbs. Cardimon use is widespread in arabic countries, it is totally unknown in TR. Ok now fill your coffee cup with fresh, cold drinking water and pour it into the cezve. you can add a lil bit more considering the evaporation. But dont forget: needless amounts of water will dilute your coffee. If you wanna have coffee for two people, put two cupfuls of water.
6. Put one sugarcube for each person. Normally turkish coffee should be drunk sugarfree, and you can eat some sweets with it like a piece of chocolate or turkish delight!
7. For each cup you should put one teaspoonful of coffee. Be generous, fill the spoon well, and dont forget to add one more spoonful "for the cezve". you need some extra coz some coffee will necessarily remain in the cezve after coffee being poured into cups.
8. Put the cezve on fire, a diehard turkish coffee must be cooked very very slowly. Otherwise you will have no froth.
9. Big tip of the day: if you wanna preserve the froth, dont try to stir the coffee until the coffee you put in the cezve melts naturally in heating water. Heap is ok but waiting until the first bubbles appear is too late. Then stir only once, but once!! Then leave the coffee to bubble.
10. Near the boiling point, your coffee will start to foam and rise. take the cezve away from heat, distribute the froth on top of the coffee to the cups. Dont use a spoon. just try to pour it. Then put the cezve back to fire. wait a couple of seconds then pour again. You should never let the coffee boil for minutes.
11. Dont stir the coffee after its in the cups. Thats why you should add sugar before boiling. İf theres two people with one asking sugary, one sugarfree coffee, care to use two cezves!! Once your coffee is ready you should serve it accompanied by a small glass of cold water. It is generally for cleaning the mouth from tiny lil coffee grains after you sip the coffee.
Turkish coffee is very digestive and you'd better drink it when you have already eaten. Never drink it to chase away a morning hangover. It is generally stronger than regular stir-and-drink instant coffees, and should not be diluted to obtain a lighter aroma. It will just not work and you will have a bad taste in your mouth!!
